Veggie Pasta Salad

A perfect, quick and easy lunch for those that are time poor!

INGREDIENTS

  • 100 grams Sliced Mushrooms

  • 25 grams Reduced Fat Smooth Feta

  • 25 grams Marion's Original Thai Spicy Satay Marinade

  • 75 grams Vetta Smart Ready Pasta Penne

  • 50 grams Shredded Chicken Breast

  • 37.5 grams Semi Dried Tomato Strips 99% fat free

  • 100 grams Broccoli - Raw

  • 100 grams Cauliflower - Raw

  • 100 grams Woolworths Mixed Leaf Leafy Mix

METHOD

  1. Cook pasta in microwave for 60 seconds.

  2. Put cauliflower and broccoli in the air fryer for 10 mins each.

  3. Add everything to a bowl and top with dressing (if this one is too spicy, try honey mustard).

  4. To meal prep this meal ahead of time, simple multiple all of the ingredients by the number of lunches you need, prep and divide amongst containers. Keep salad mix seperate, heat prior to eating and top with salad leaves.
